As part of 75 years of Independence, India Government Mint released multiple variety of sets that were all “Circulating Coins” but obviously not circulated and then packaged. So, technically they are “UNC” as far as I understand. But I don't see anything “UNC” in these coins.

These were called “AKAM” series, short for “Azadi Ka Amrit Mahotsav” ("Celebrating 75 years of India's Independence").

The coins are listed separately here -

Of course, every coin has an option to select its “condition” as “UNC”, but no option to recognize it as part of a “set”. Is this something that can be done, or should I just add 3 x UNC coins for each category, since I have three sets as shown in the attached picture?

I think what you are asking for is a “set” year line. Sets are not currently in the Numista catalog but could be in the future sometime.  I collect US Uncirculated Mint Sets.  I add them on the normal circulation strike year line with a grade of UNC. I also have them in special collection.

Thank you.

So if I understand correctly, then if I have a set of 5 coins (1,2,5,10,20), then I just add them individually in the listings of those coins and mark them as “UNC”. and of course, I can add a “comment” (public or private) to mention that those entries were part of a set. May be even adjust the buy price accordingly (example: If a 5-coin set was bought for INR 1,000, then I can list each coin separately, mark it as UNC and set buy price as INR 200).

Am I correct in my understanding so far?

Exactly. The difference in the other one you asked about https://en.numista.com/forum/topic153638.html is that there was only a Proof year line listing and no business strike year line.  These coins all have a normal business year lines so that's where coins from an uncirculated mint set should go.

Sets are not currently in the Numista catalog

Not entirely correct. Just as an example: UK 1968 circulating coins have a separate yearline for coins from a set!

True, and Australia and Canada.  I should have said sets are currently not allowed except when they are.

Year lines should be about the coin and not the packaging.  Proof, BU mint finish yes, Circulation coin in a pink envelope, no.

As of now, we do not have separate lines for sets. I think it should stay that way to keep things simple on the Indian catalogue which is already quite complex as it is. Uk, Australia and Canada having set lines is an abberation and I recall this was done before the rules were set, so it was a bit late to go back lest things became a mess

Sets will be developed in the future, but not yet. There is an engagement bias in some parts of the catalogue that we tolerate but it should not spread before having the actual feature, to avoid major manual rework in the future
