I suggest naming them after the animal on the obverse.

Nah, let's not do that.

The reason why we have "- Elizabeth II" is to allow easy searching for monarchs (for members like Mark), and to give respect to the leader on the coin. We leave out presidents because they are not monarchs. If Fiji is not under the British Commonwealth anymore, then we can remove Elizabeth II from the title on the new coins.

It's the same as Jamaican and Trinidad & Tobago stuff; manxcat still recognised as the sovereign head of state.. If I was still new (I am obviously still learning though as we all are) then I wouldn't have known if these were collectible to me :)
Actually Fiji are currently suspended from the Commonwealth although I think Elizabeth is still the recognised head !

Fiji is a republic, and the head of state is a president. There is no governor general since 1987.

If Fiji has almost little to no connection to the Commonwealth or any form of UK government,

The title "Elizabeth II" should be removed from all Fijian coinage without the queen on the obverse.

I thought it odd myself that the queen was on the coinage anyway since they were thrown out!
Having checked on Wikipedia, Fiji is currently a suspended member of the Commonwealth of Nations (they were suspended in 2006 following the coup d'etat)

I think that Fiji has got rid of her for good as of 2013 (from the coins.)  z)
