I know people adding values will take lot of time to get a correct global value for coins, but I guess a coin VF being more expensive for a XF is a non-sense, so,
maybe its just a crazy idea but why not insert a simple code for values:

IF G>VG THEN VG=G

and so on:

IF VG>F THEN F=VG
etc...

Not sure if I made myself clear.

Wouldnt that solve the issue? with that code all values will be lower to higher together with the grade,.

In what scenario a VF coin will value MORE than a XF coin?
In none, and Xavier has this on his to d list already. :)

One small question here, does value of coins in net eur value change thru time and what would be an appropriate way to adress this? Shall a value of a certain coin still reflect its true net value after some time has past since value was added?

There are many of reasons why a lower grade has a higher buying price than a better one.
Because these are international prices with clear distortions from the regions of bigger member count.
- a coin can cost more in a further away country then the place of origin or the other way around
- if people bought a coin in an auction some people include every cost aspect from provisions to shipping cost some don't
- grading can be at times a very subjective thing
...

About the time thing ... maybe if there are enough values comming in over time older value could fade out of the calculation.

This was implemented some months ago. Values are adjusted so that if a higher grade has a lower value that a lower grade, both get the same value, which is recomputed from the underlying data from both grades.
